Instant Pot Black-eyed Peas

These Instant Pot Black-eyed Peas with bacon are an easy and delicious side dish. Ready in about an hour with a few simple ingredients. Enjoy this no-soak recipe on New Year's Day or any day with your favorite main dish.

Equipment

  • 6-quart Instant Pot or Ninja Foodi All-in-One

Ingredients

  • 16 oz bacon I used smoked bacon that I diced into cubes, similar to pancetta
  • 1 cup yellow onions diced, about half a yellow onion
  • 1 cup bell pepper diced, I used green bell pepper
  • 5 Cloves garlic minced
  • 1 lb black-eyed peas dried
  • 6 cups water
  • 3 tbsp better than chicken bouillon
  • 4 bay leaves
  • 1/2 tsp black pepper
  • 1 tsp homemade cajun seasoning I used this recipe

Instructions

  • Add the black-eyed peas to a mesh strainer. Rinse under cold water for 1 minute. Allow to drain.
  • Turn the instant pot on high with the sear/sauté function.
  • Add bacon, onions and garlic. Sauté for 5 minutes (the onions will be translucent and the bacon will be browned). Turn off the sear-saute function on the instant pot.
  • Add the black-eyed peas, water, bouillon, bay leaves. Stir to combine.
  • Cover the instant pot with the pressure cooker lid. Set the lid to “seal”.
  • Turn on high pressure for 40 minutes. After the time elapses, allow the beans to continue to cook with the lid on for another 15 minutes.
  • Manually remove the remaining pressure by turning the seal to vent. Remove the lid.
  • Stir the black-eyed peas and add seasonings, salt, and pepper to taste.
  • Remove the bay leaves before serving.
