Dorito Casserole

This Dorito Casserole is packed with inspired Mexican and layers of nacho Doritos, ground beef, two salsas and melty cheese that's baked until golden and delicious.

Ingredients

  • 1 1/2 lbs ground beef
  • 1 large onion finely diced
  • 1 green bell pepper finely diced
  • 2 garlic cloves minced
  • 1 cup red salsa
  • 2/3 cup salsa verde
  • 1 packet of taco seasoning
  • 1/3 cup chicken stock
  • 1 cup sour cream
  • 1 cup black beans drained and rinsed
  • 10 3/4 oz cream of chicken soup
  • 3 cups Mexican cheese shredded divided
  • 14 oz family sized Nacho Cheese Doritos crushed into slightly smaller pieces
  • Garnish: Tomato, lettuce, cilantro, diced tomatoes, olives and sour cream

Instructions

  • Preheat oven to 350°F and grease a 13x9 casserole dish.
  • In a skillet, cook ground beef (or turkey), onion, bell pepper, and garlic; drain fat.
  • Mix in salsas, taco seasoning, and ⅓ cup chicken stock, cooking until liquid thickens, about 4-5 minutes. Remove from heat.
  • In a bowl, combine meat mixture, sour cream, black beans, cream of mushroom, and half the cheese.
  • Layer 2 cups of Doritos, half the meat mixture in the dish, and repeat. Top with another 2 cups of Doritos and remaining cheese.
  • Cover with foil and bake for 30 minutes. Remove foil, add extra cheese, and bake until cheese melts.
  • Cool for 10 minutes, garnish, and serve.

Notes

Do not add cheese before the foil is put on. The cheese will stick to the top of the foil. Wait until the end to add the cheese, uncovered.
Refrigerate for up to 4 days.  Any longer, and it becomes too soggy.
