1cupyellow cornmeal
1cupall-purpose flour
2/3cupgranulated sugar
1tspbaking powder
1tspbaking soda
1tspsalt
1 1/4cupsbuttermilk
1large egg
1/4cupoil
Instructions
Preheat oven to 400°F and line a muffin pan with liners.
In a large bowl, whisk cornmeal, flour, sugar, baking powder, baking soda, and salt.
In a medium bowl, mix buttermilk, egg, and oil. Combine with dry ingredients until just mixed.
Fill muffin liners ⅔-¾ full with batter. Bake 14-20 minutes until a toothpick comes out clean. Cool before enjoying.
