Ingredients

For the Buttermilk Marinade

  • 1 cup plain oat milk
  • 1 tbsp apple cider vinegar
  • 1/3 cup hot sauce
  • 16 oz oyster mushrooms cleaned and sliced

For the Flour Mixture

  • 3 tbsp cornstarch
  • 3 cups all purpose flour
  • 1 tbsp organic brown sugar
  • 2 tsp cayenne pepper
  • 1 1/2 tsp black pepper
  • 1 1/2 tsp paprika
  • 1 1/4 tsp garlic powder
  • 1 1/4 tsp onion powder
  • 1 tsp sea salt

For the Dredge Batter and Frying

  • 1 cup oat milk
  • 3/4 cup all purpose flour
  • Neutral oil enough for adding 2 inches of deep frying oil

Instructions

  • Whisk oat milk, apple cider vinegar, and hot sauce in a large bowl. Soak oyster mushrooms in this mixture for 15-20 minutes. In another bowl, prepare the flour mixture.
  • Heat oil in a medium pot over medium heat. After marinating, remove mushrooms, keeping the liquid. In this liquid, whisk 1 cup oat milk and ¾ cup flour to make a dredge batter.
  • Coat each mushroom in flour, then batter, and again in flour. Set aside for 10 minutes before frying. Fry in batches, turning for even browning. Drain fried mushrooms on a wire rack or paper-towel-lined plate.
  • Cool for 5 minutes and serve.

Notes

If reheating from frozen, it’s best to cook them straight from frozen to prevent the batter from sticking. To reheat fried oyster mushrooms, you can re-fry them.
Alternatively, heat them in the oven or air fryer at 375 degrees F for about 10-15 minutes, or until they are warmed through.
