Air Fryer Breakfast Potatoes

These air fryer breakfast potatoes with onions and peppers are a great way to enjoy crispy golden brown seasoned potatoes using minimal oil.

Ingredients

  • 24 oz baby red potatoes cut into quarters (some may need to be cut into sixths or eighths to make the cuts consistent)
  • 1 tsp garlic powder
  • 3/4 cup bell peppers chopped
  • 3/4 cup yellow onion chopped
  • 1 tbsp Cajun Seasoning get Jocelyn's cajun seasoning recipe
  • 1 tsp sea salt can save until the end to be able to salt to taste
  • 2 tbsp olive oil

Instructions

  • Rinse potatoes in a strainer to remove excess starch.
  • Add the ingredients to a bowl and mix to incorporate.
  • Add the seasoned vegetables to your air fryer basket in a single layer.
  • Air Fry at 400 degrees for 15-20 minutes, the goal is to make the potatoes tender enough for you. Stir halfway through.

Notes

This recipe was tested with low salt and salt-free cajun seasoning blends. If you use cajun seasoning with salt from the store, be sure to start with about 1/2 tsp and add more to taste. You can omit the salt in this recipe if you do!
