Scalloped pineapple is a simple dessert that will impress any crowd. Using just a few ingredients, this sweet pineapple bread recipe is the perfect recipe for picnics, potlucks, and Sunday dinners. You can make this ahead of time & double the recipe to feed a larger crowd.

Ingredients
4cupsbread, cut into 1-inch pieces
20ouncespineapple chunks, drained
3eggs, beaten
1cup butter, melted
3/4cup brown sugar
Instructions
Preheat oven to 350 degrees.
Spray a 2-quart baking dish with cooking spray.
In a large bowl, toss together the bread cubes & pineapple chunks. Pour the mixture into the greased baking dish.
Mix together the eggs, sugar, cinnamon, and butter. Pour the mixture on top of the pineapple.
Cover with foil & bake at 350 degrees for 30 minutes. Uncover and bake an additional 5-10 minutes.
Notes
I added 1 teaspoon cinnamon & a handful of maraschino cherries.
