5.2ozboursin cheesesoftened - I used garlic and fine herbs, but shallot and chives and caramelized onions and herbs also work - to mix this easier, I cut this into pieces.

¾cupshredded cheeseI used an Italian blend cheese, but mild cheddar cheese also works

Instructions
Add the potatoes to the steamer insert of an instant pot. Pour in one cup of water.
Pressure cook the potatoes in high for 12 minutes.
Use quick pressure release to remove the lid.
Add the potatoes to a large bowl with the butter (the hot potatoes will melt the butter) or drain the Instant Pot cooking pot and put the potatoes back with the butter.
Use a potato masher to mash the potatoes.
Stir in cheese, seasonings and spices and enjoy - if your potatoes are not hot enough to melt the cheese, you can add the mixture to a microwave safe dish to heat for 30 seconds to one minute.
