Mashed Potatoes with Cheese

Ingredients

  • 2 lbs russet potatoes washed and peeled
  • 1 cup water for the Instant Pot
  • ½ cup salted butter cut into 1 tbsp pieces
  • ¼ cup milk
  • 2 tsp garlic powder
  • 5.2 oz boursin cheese softened - I used garlic and fine herbs, but shallot and chives and caramelized onions and herbs also work - to mix this easier, I cut this into pieces.
  • 2 oz cream cheese softened
  • ¾ cup shredded cheese I used an Italian blend cheese, but mild cheddar cheese also works
  • 1 tsp 24 Herb Sprinkle Seasoning
  • 1 tsp sea salt

Instructions

  • Add the potatoes to the steamer insert of an instant pot. Pour in one cup of water.
  • Pressure cook the potatoes in high for 12 minutes.
  • Use quick pressure release to remove the lid.
  • Add the potatoes to a large bowl with the butter (the hot potatoes will melt the butter) or drain the Instant Pot cooking pot and put the potatoes back with the butter.
  • Use a potato masher to mash the potatoes.
  • Stir in cheese, seasonings and spices and enjoy - if your potatoes are not hot enough to melt the cheese, you can add the mixture to a microwave safe dish to heat for 30 seconds to one minute.
