Ingredients

3 Ingredient Lemon Lime Cake

  • 15.25 oz Yellow Cake Mix your favorite boxed cake mix works well in this recipe
  • 1.5 cups Sprite 1, 12 oz can of sprite
  • 2 large eggs beaten

Lemon Lime Cream Cheese Frosting

  • 8 oz Cream cheese softened
  • ½ cup Butter softened
  • 1 cup Powdered sugar
  • 1 tbsp Vanilla extract
  • ½ Lime Zest about 1 tbsp
  • ½ Lemon Zest about 1 tbsp

Instructions

For the soda cake:

  • Preheat the oven to 350 degrees.
  • Add the cake mix, sprite and eggs to a large mixing bowl. The mixture will be bubbly at first. So, gently use a rubber spatula to fold it together until incorporated.
  • Add the batter to a greased 9x13 (or other rectangle) glass baking dish. To grease my pan, I simply sprayed the entire pan with cooking spray.
  • Bake for 22-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool.

For the frosting:

  • Add all of the ingredients for the frosting to stand-mixer and mix until fluffy (about 3 minutes).
  • Add the frosting to the cake. Top with lime or lemon slices and/or zest and serve.
