Brunswick Stew

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 teaspoon minced garlic
  • 1 teaspoon fresh thyme, minced
  • 1 14-ounce can diced tomatoes
  • 1 8-ounce can tomato sauce
  • ½ cup BBQ sauce
  • 1 teaspoon Creole seasoning
  • 1 pound cooked chicken or turkey, shredded
  • 1 pound pulled pork
  • 2 cups chicken broth
  • cups frozen sweet corn
  • cups frozen lima beans
  • 1 cup frozen okra
  • Salt and pepper to taste

Instructions

  • Heat oil in a large Dutch oven pot over medium heat. Then add onions, garlic, and thyme, and sauté for 2-3 minutes until the onions are translucent.
  • Next, add diced tomatoes, tomato sauce, BBQ sauce, and Creole seasoning. Continue cooking for another 3 minutes.
  • Pour in chicken broth, bring to a boil, and let it simmer for about 1-2 minutes. Then add in shredded cooked chicken and pulled pork, and continue cooking for about 8-10 minutes.
  • Finally, add the sweet corn, lima beans, and okra and continue cooking for 5-7 more minutes or to desired consistency. Taste and adjust salt and pepper as desired.
  • Garnish with fresh parsley, serve warm, and enjoy.

Notes

  • If the stew becomes too thick, add more broth a little at a time until you get the desired consistency.
