Peach Filling
3Tablespoonsunsalted butter
215 ozcans peaches in fruit juiceone drained, one undrained
⅓cupbrown sugarpacked
1 ½teaspoonsvanilla extract
½teaspoonground cinnamon
¼teaspoonground nutmeg
⅛teaspoonsalt
Biscuit Topping
¼cupbuttercold and cut into cubes
1cupall-purpose flour
1cupgranulated sugar
2teaspoonsbaking powder
½teaspoonsalt
½cupmilk
Instructions
Peach Filling
Preheat oven to 350 degrees Fahrenheit. Place the butter in a 1.5-quart baking dish and place in the preheated oven. Allow the butter to melt in the dish. Once melted, remove the pan from the oven.
Add the peaches (one can drained, the other can undrained) to the baking dish. Add the brown sugar, vanilla extract, cinnamon, nutmeg, and salt to the dish. Stir until combined. Set aside.
Biscuit Topping
In a large bowl, add all-purpose flour, sugar, baking powder, and salt and stir to combine. Add the butter. Using a pastry cutter or two forks, mix in butter. The flour mixture should still have chunks of butter that are the size of small peas.
Make a well in the middle of the bowl and add in milk. Stir until combined.
Spoon the dough over the peaches until most of the peach mixture is covered. Leave the edges uncovered.
Bake in preheated oven for 50 minutes to an hour until the top is golden.
Remove. Allow cooling for 5 minutes before serving.
