Ingredients

Peach Filling

  • 3 Tablespoons unsalted butter
  • 2 15 oz cans peaches in fruit juice one drained, one undrained
  • cup brown sugar packed
  • 1 ½ teaspoons vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • teaspoon salt

Biscuit Topping

  • ¼ cup butter cold and cut into cubes
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup milk

Instructions

Peach Filling

  • Preheat oven to 350 degrees Fahrenheit. Place the butter in a 1.5-quart baking dish and place in the preheated oven. Allow the butter to melt in the dish. Once melted, remove the pan from the oven.
  • Add the peaches (one can drained, the other can undrained) to the baking dish. Add the brown sugar, vanilla extract, cinnamon, nutmeg, and salt to the dish. Stir until combined. Set aside.

Biscuit Topping

  • In a large bowl, add all-purpose flour, sugar, baking powder, and salt and stir to combine. Add the butter. Using a pastry cutter or two forks, mix in butter. The flour mixture should still have chunks of butter that are the size of small peas.
  • Make a well in the middle of the bowl and add in milk. Stir until combined.
  • Spoon the dough over the peaches until most of the peach mixture is covered. Leave the edges uncovered.
  • Bake in preheated oven for 50 minutes to an hour until the top is golden.
  • Remove. Allow cooling for 5 minutes before serving.
  • Suggested toppings: vanilla ice cream, whipped cream.

Notes

  • Use a 1.5 qt dish for this recipe or use an 8x8 or 2 qt dish. These dishes will be deep enough to hold your cobbler.
  • Use canned peached in 100% fruit juice.
  • Make sure one of the cans of peaches is completely drained. This will ensure your syrup is the correct consistency and not watery.
