Grilled Vegetable Marinade

This grilled vegetable marinade uses simple ingredients but its packed with flavor. Grab your favorite veggies and get ready to fire up the grill. Marinate for a quick 30 minutes and grill to perfection. The best part about this grilled vegetable marinade is that you can use it on more than just veggies. This marinade is also good with seafood, poultry, and read meat!

Ingredients

  • Up to 3 pounds of Vegetables, chopped

MARINADE

  • 1/2 cup oil of your choice
  • 1/2 cup red wine vinegar
  • 1/3 cup soy sauce
  • 1 1/2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt

Instructions

  • In a small bowl, mix together the marinade ingredients until well blended.
  • Add the raw veteables to a large bowl or plastic bag. Pour the prepared marinade on top. Ensure all the pieces are have been coated. Cover/seal and refrigerate for 30 minutes.
  • Preheat the grill to medium heat. Lightly oil the grill. Remove the vegetables from the marinade and add the the preheated grill.
  • Cook 10 to 12 minutes or until vegetables are tender to your liking.
