Grilled Vegetable Marinade

This grilled vegetable marinade uses simple ingredients but its packed with flavor. Grab your favorite veggies and get ready to fire up the grill. Marinate for a quick 30 minutes and grill to perfection. The best part about this grilled vegetable marinade is that you can use it on more than just veggies. This marinade is also good with seafood, poultry, and read meat!

Ingredients For Grilled Vegetable Marinade

  • Oil 
  • Red Wine Vinegar
  • Soy Sauce
  • Seasonings: dried oregano, garlic powder, salt, pepper

How To Make A Grilled Vegetable Marinade

  1. In a small bowl, mix together the marinade ingredients until well blended.
  2. Add the raw veteables to a large bowl or plastic bag. Pour the prepared marinade on top. Ensure all the pieces are have been coated. Cover/seal and refrigerate for 30 minutes.
  3. Preheat the grill to medium heat. Lightly oil the grill.
  4. Remove the vegetables from the marinade and add the the preheated grill.
  5. Cook 10 to 12 minutes or until vegetables are tender to your liking.

What Type Of Vegetable To Use

You can use your favorite grilled veggies for this. Having said that, some vegetables will work better than other. I used a combination of red bell pepper, green bell pepper, mushrooms, zucchini, yellow squah, and carrots. Other veggie suggetions include onions and tomatoes.

Storing Leftover Marinade

Let the grilled vegetables cool completely before storing any leftovers. Store in an airtight container, resealable bag, or can wrap in foil or plastic wrap. The leftover grilled vegetables will keep in the refrigerator for up to 4 days. If you don’t plan to eat the grilled vegetables within a few days, freezing them! Place the cooled vegetables in a freezer-safe container or bag. Frozen grilled vegetables will last for up to 2 months in the freezer. When you’re ready to eat the frozen grilled vegetables, thaw them in the refrigerator overnight.

Ingredients

  • Up to 3 pounds of Vegetables, chopped

MARINADE

  • 1/2 cup oil of your choice
  • 1/2 cup red wine vinegar
  • 1/3 cup soy sauce
  • 1 1/2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt

Instructions
