Southern Vinegar Based Coleslaw

Southern vinegar based coleslaw is a quick yet tasty coleslaw where the dressing is primarily made with vinegar, rather than mayonnaise. This mayo-free slaw is a healthier alternative to traditional coleslaw but not lacking in flavor. Using simple ingredients like cabbage, carrots, vinegar, and oil, this easy coleslaw can be tailored to your liking.

Ingredients for Southern Vinegar Based Coleslaw

  • Shredded cabbage
  • Shredded carrots
  • Vinegar
  • Sugar
  • Oil
  • Seasonings: salt, pepper, celery salt

How To Make Southern Vinegar Coleslaw

  1. In a large bowl combine the shredded cabbage and carrot. Toss until mixed. 
  2. Add the sugar, salt, pepper, and celery salt. Pour the vinegar and oil over the cabbage mixture. Toss everything together until all the food is evenly coated.
  3. Cover with plastic wrap or a lid & refrigerate for at least 1 hour. Serve the vinegar-based coleslaw chilled.

What Type Of Vinegar To Use

The key ingredient in this vinegar based coleslaw is….vinegar!  I like to use white white vinegar however other types of vinegar such as apple cider vinegar or rice vinegar can also be used. In addition to being healthier than mayonnaise, vinegar provides the coleslaw with a sharp and tangy flavor.

How To Serve Southern Vinegar Coleslaw

Coleslaw is commonly served as a side dish or topping for a a lot of recipes like BBQ pulled meat. You will find coleslaw on a lot of summer picnic menus because coleslaw pairs well with grilled or smoked meats. Coleslaw is best served chilled, not warm. Store coleslaw in the refrigerator until ready to serve.

  • Store leftovers in an airtight container in the refrigerator for up to 4 days. 
  • Use fresh, crisp vegetables for a better texture.
  • Shred the vegetables properly and evenly. You can use a a sharp knife or a mandoline slicer to achieve the thin, uniform shreds.
  • Adjust the amount of vinegar, sugar, salt, and other seasonings according to your taste preferences. Gradually add and taste the dressing as you go, so you can adjust the flavors as needed. Coleslaw is a dish that you can adjust the ingredients & seasonings to really make it your own!
  • Add any optional additions like bell peppers or green onions
  • Allow the coleslaw time to marinate at least 1 hour before serving. This will allow the flavors to meld together and for the cabbage to soften slightly.

Ingredients

  • 4 cups cabbage, shredded
  • 1 cup carrots, shredded
  • 1/2 cup white vinegar
  • 1/3 cup oil
  • 1/4 cup sugar (or more)
  • 1 teaspoon salt
  • 1/2 teaspoon celery salt or celery seed
  • 1/4 teaspoon pepper
