1/2
cup
self rising flour
1
tbsp
granulated sugar
1/3
cup
buttermilk
1
large egg
beaten
1/3
cup
water
or more if you need
2
tbsp
bacon grease
or you can use butter
butter and oil for frying
Instructions
Combine cornmeal, flour, and sugar. Gradually mix in buttermilk and egg to form a thick, soup-like batter. Stir in water and bacon grease.
Heat butter and a bit of oil in a cast iron skillet to prevent burning.
In batches, drop 1/8 cup of batter into the skillet. Flip when edges are set, bubbled, and browned.
Drain hoe cakes on paper towels and serve hot.
Notes
I would make sure to add either oil or butter and oil to fry so the butter doesn't burn.
