Ingredients
2 1/2lbsYukon Gold potatoespeeled and medium diced
3/4cupchicken stock
2 1/2tspkosher salt
1/2tspblack pepper
1cupbuttermilk
1/2cupheavy cream
5tbspunsalted buttercut into small pieces
1 1/2tbspchivesminced
Instructions
Put potatoes, chicken stock, and 1 teaspoon of salt into a 5-quart slow cooker. Cover it and cook on medium for 2 ½ hours until the potatoes are fully cooked and tender when pierced with a fork.
Once cooked, turn off the slow cooker and use a potato masher or a sturdy whisk to mash the potatoes.
Stir in the remaining salt, black pepper, buttermilk, heavy cream, and butter until everything is well combined.
Finish with a sprinkle of chives and serve the potatoes warm. If needed, they can be kept warm in the slow cooker for up to two hours.
Notes
*You may leave skins on potatoes for more texture, if you like. They may take about 20 minutes longer to cook.
