Add 1 tbsp avocado oil to a 12 in cast iron skillet - tilt the skillet to coat the bottom of it with the oil.
Preheat the oil and the skillet in the oven at 425 degrees. This takes 15-20 minutes to fully heat the skillet and oven. By heating the skillet, the meat is able to start cooking and searing immediately.
Add the chicken pieces, seasoning, dry rub, and the rest of the avocado oil to a large bowl. Use tongs to evenly coat the chicken.
Lace the chicken pieces onto the skewers. Avoid stuffing them since it makes the chicken harder to cook. I use about 5-6 chicken bites per skewer.
Add the skewers to the cast iron skillet in a single layer.
Bake at 425 for 12 minutes.
Use a basting brush to coat both sides of the skewers with bbq sauce.
Bake at 425 for 5-10 more minutes to cook the chicken skewers through. I tend to cook for 10 minutes because we like our skewers to be slightly charred.
