2 ¼cupswaterplus more to thin out to your liking
2cupschicken broth
2cupsquick grits
4tablespoonsunsalted butter
Kosher salt
black pepper
2tsplight brown sugar
1tspgarlic powder
2/3cupcanned coconut milk
2cupsgouda cheeseshredded
Instructions
Begin by setting a medium saucepan on the stove and bringing a mix of water and chicken broth to a rolling boil. As the bubbles dance, introduce the grits and a dollop of butter. Season this blend with salt and peppe then give it a good stir.
Now, cover the saucepan, turn the heat down to a medium simmer. Stir occasionally, watching as the mixture transforms into a thick texture. When you see the grits starting to absorb the liquid, stir in the brown sugar and a hint of garlic powder.
When the grits are done, stir in the coconut milk and cheese in small increments. Add ¼ cup coconut milk and about ½ cup cheese and stir. Continue this until all the milk and cheese is mixed in. At this point you can also add more water to thin the grits to your liking. Season with salt as desired.
Notes
Best served hot and fresh. If you have leftovers, gently reheat on the stove with a little additional liquid.
