Ingredients Needed
- Baby red potatoes: I cut my baby potatoes into quarters. You may need to cut some into sixths or eighths to make consistent cuts.
- Garlic powder
- Bell peppers: You can use green bell pepper, red bell peppers or another that you prefer. I chopped these so be roughly the same size of the potatoes.
- Yellow onion: Chopped
- Cajun seasoning: this is a salt-free seasoning mix, that includes things like onion powder and black pepper, white pepper, and more. Since it doesn’t have added salt, you have the ultimate flexibility for salting these seasoned potatoes to taste.
- Sea salt: I typically save this until the end and salt to my personal preference.
- Olive oil: I use olive oil or avocado oil, but other options include vegetable oil.

- Add the ingredients to a large mixing bowl and mix to incorporate.

Recipe Tips & FAQs
- For best results, cut the potatoes and other vegetables into the same size. When they are a different size, it is more challenging for them to cook evenly.
- You can use other potatoes like russet potatoes, Yukon gold potatoes, yellow potatoes and even sweet potatoes.
- Mix up the bell peppers and onions. Green or red bell peppers and other onions like red onion will do.
- Reduce the potatoes’ starchiness by rinsing them in cold water. You can soak them for a few hours before cooking for better results.
Storage and Leftovers
Store leftover potatoes in an airtight container for 3-4 days in the fridge.
Soaking potatoes helps remove excess starch. However, you don’t have to soak them if you’re in a hurry; rinsing them in cold water will do.
The cooking time depends on the size of the potato. I cook air fryer breakfast potatoes at 400 degrees for 15-20 minutes in the air fryer.
If your potatoes are soggy, it’s either because you didn’t use enough oil or you didn’t cook them long enough. Also, making crispy breakfast potatoes requires you to remove excess starch from the potato cuts, so skipping this step may cause sogginess.
Piercing helps release steam from the potatoes, but you don’t have to do it. This recipe uses baby potatoes because they cook faster. You can pierce them before cutting them if you wish.
The potatoes will soak up a lot of flavor as they cook, so adding salt before isn’t necessary. Save the salt until the end to be able to salt to taste.
