I don’t know about you, but I love biscuits any way they come. They’re better than sandwich bread, IMHO. And a fried chicken filet enveloped in a soft, tender biscuit is my idea of the perfect breakfast. Even better, these guys are typically ready in less than 30 minutes.

Oh, the numerous ways we can use biscuits. Don’t get me started on gravy and sausage patties. Who needs McDonald’s anyway? And take strawberry shortcake over the top with a biscuit instead of shortbread for an easy springtime dessert. Yum!!!

What Makes a Superior Biscuit?

The most obvious secret to the best biscuits is starting with the finest ingredients. Essential ingredients include:

  1. low-protein flour
  2. good butter
  3. real buttermilk (sorry, no subs on this one)
  4. fresh baking powder

However, if you can only have one high-quality ingredient, make sure it’s the butter.

Another secret to exceptional biscuits is making sure all your ingredients are super cold. Sometimes I put everything in the freezer, even the flour, about 10 minutes before throwing it all together. If you’re afraid you might not get to it in 10 minutes, leave the buttermilk in the fridge.😉

Tips and Tricks

  • Make square biscuits. If you’re not worried about the shape of your biscuits, save yourself some time by cutting them into squares. Moreover, you won’t have to rework the dough left from cutting them into rounds.
  • Work the biscuit dough as little as possible because you don’t want to melt your butter before getting your biscuits in the oven.
  • Freakin’ cold butter. The freezer is as cold as you can get, right? Try grating frozen butter, tossing the shreds with a spoonful of flour (so they don’t stick together), and putting them back in the freezer until you’re ready to make your biscuits.
  • Brush melted butter over the biscuits right after they come out of the oven for extra buttery richness.

Have you ever searched for a good biscuit recipe to find what looked more like a cracker? Yeah, me too. So, for the record, American biscuits are a unique creation often confused with scones. And English biscuits are called crackers in the States.

Are scones and biscuits the same?

While they are both fantastic for breakfast, they’re not the same. Biscuits have more butter, and the baking powder reacts stronger to the buttermilk’s acidity for fluffier results. Scones are more likely to have cream and eggs, creating a denser texture with a firm crumb.

What texture should biscuits have?

They should be soft, buttery, and melt in your mouth. If you would like a lightly crispy crust, let them cool uncovered. If you want them softer, wrap them up with a clean kitchen towel to keep in the moisture while they cool.
