Bacon Corn Maque Choux

How To Make Bacon Corn Maque Choux

  1. Heat a large skillet over medium-high heat. Add the bacon and cook until it’s crisp to your liking, approximately 10 minutes. Remove bacon & place on a paper towel lined plate. 
  2. Add the onion and bell pepper and cook until 3-5 minutes, stirring frequently. 
  3. Add the corn and Creole or Cajun seasoning. Mix until well blended. Stir in the heavy cream. Cook 7-10 minutes on low to medium heat. 
  4. Stir in the cooked bacon before serving.

What Is Maque Choux?

The words maque choux (pronounced mock shoe) is of Creole/Native American origin. It’s a common side dish found in Creole and Cajun cooking. The main concept of a maque choux is cooking corn, bell peppers, and onions in bacon fat. I take it a step further and add bacon as a main ingredient.

What Type Of Corn To Use

A traditional maque choux uses corn on the cob. This is not a traditional maque choux; it’s meant to be quick and easy so it is written to use frozen or canned corn. Frozen or canned corn is cooked. If you use raw corn, you may need to cook it longer.

FAQs & Tips

  • Use your preferred bell pepper. I used a combination of half red bell pepper and half green.
  • Omit the meat and make this a vegetarian side dish. To make this vegan, in addition to omitting the bacon, be sure to use a vegan-friendly oil (like avocado oil) when cooking the vegetables. 
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.

  • 16 ounces cooked corn (frozen or canned)
  • 8 ounces bacon, chopped
  • 1 bell pepper, diced
  • 1/2 cup onion, diced
  • 1 tablespoon Creole or Cajun seasoning
  • 1/2 cup heavy cream

Made this with Farmers Market corn after boiling it and cutting it off the cob. I only used 3tbs of heavy cream didnt want cream corn. So so good
