This Sprite Cake with Cake mix recipe is a super easy dessert with just three ingredients. The lemon lime flavor makes it the perfect summer option for gatherings like family reunions and cookouts. - Perfect for beginners: I love baked goods, but actually prefer not to bake because adding “a little of this or a little of that” (like I do in cooking) can have poor results. By using box mix, you’re able to skip a lot of steps to have a fluffy end result without fuss.
Ingredients Needed
This Sprite soda cake doesn’t require much. Here’s what you’ll need to gather (be sure to check out the recipe card at the bottom of the post for exact ingredient amounts):
3-Ingredient Sprite Cake
- Box of Cake Mix: I’m using classic yellow cake mix, but your favorite boxed cake mix will work in this recipe. You can also use white cake mix or even lemon cake mix (for extra lemon flavor).
- Sprite: This cake traditionally uses a can of Sprite. But, you can use any lemon-lime flavor can of soda for this recipe. For example, store and generic brands work as well as things like Sierra Mist.
- Eggs: I’m using large eggs. I beat the eggs to make them easier to mix without over-mixing the batter.
Lemon Lime Cream Cheese Frosting
You can absolutely top this sprite cake recipe with a dollop of cool whip. But, I enjoyed adding this simple cream cheese icing, you’ll need:
- Cream cheese
- Butter: I’m using salted butter
- Powdered sugar
- Vanilla extract
- Lime Zest and Lemon Zest: I used both a lemon and lime to keep with the lemon lime soda theme, but you can swap these for lemon extract. Just add it to taste.
How To Make Sprite Cake with Cake Mix
- Preheat the oven to 350 degrees.
- Add the cake mix, sprite and eggs to a large bowl. The mixture will be bubbly at first. So, gently use a rubber spatula to fold it together until incorporated.
- Add the batter to a greased 9×13 inch pan. To grease my pan, I simply sprayed the entire pan with cooking spray.
- Bake for 22-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool.
Adding Lemon Lime Cream Cheese Icing
- Add all of the ingredients for the frosting to stand mixer and mix until fluffy (about 3 minutes)
- Add the frosting to the top of the cake. Top with lime or lemon slices and/or zest and serve.
Recipe Tips & FAQs
- Adjust the cook time: the cook time for all baked goods can vary based on your oven and altitude. For example, people who live in places with higher altitudes (west coast) tend to need more time to bake foods. Be sure to use these tips for baking at high altitudes to adjust if you aren’t familiar.
- Use the eggs for a fluffier cake: while you can make a 2-ingredient sprite cake with just soda and cake mix, the result is a bit crumbly. It reminds me of cornbread. So, be sure to add the eggs to help your cake become fluffy.
- Be sure that your soda isn’t flat: the carbonation and bubbles in the soda help the cake rise and have a fluffy texture. The simplest way to make sure your soda isn’t flat is to open a new bottle of unrefrigerated soda or use a can.
- Allow the ingredients to come to room temperature for best results
Lemon Lime Soda Cake Variations
- Make cupcakes: you can make your guest a personal cupcake, by simply baking the batter in a muffin pan.
- Give it the look of a “pound cake”: I wanted to keep things simple, but you can also make this recipe in a bundt pan. Simply add a little flour and oil to your bundt pan to be sure that it doesn’t stick (tips included in this cake pan release recipe).
- Make a layer cake: you can use two 8 inch cake pans to make a layer cake. Just add the frosting in between the layers.
Adding Sprite to a cake adds a lemon lime flavor. But, the carbonation in the soda also helps add an airy, fluffy texture to the final result.
Sprite (or another lemon lime soda) is used as a substitute for other liquid ingredients, such as water or milk, in a cake recipe. Some people also use it to replace the eggs. I personally prefer using eggs in soda cake since the end result has the best texture.
